
These Crispy Cheesy Beef Taquitos are the answer to the age-old question: “What should I do with that pack of ground beef?” Unlike traditional deep-fried taquitos, these are pan-seared to achieve a perfectly shattered-glass crunch while keeping the inside gooey and tender.
Paired with a creamy, zesty avocado dipping sauce, they make for a crowd-pleasing appetizer or a lightning-fast weeknight dinner.
The Recipe: Crispy Beef Taquitos with Creamy Avocado Dip
The Beef Filling
• 1 lb (500g) Ground Beef
• 1 Onion, finely diced
• Seasoning Blend: 1 tsp each of salt, pepper, paprika, garlic powder, and chili flakes.
• 1 tbsp Tomato Paste
• ½ cup Beef Broth (to keep it juicy)
• Shredded Mozzarella
• Flour Tortillas
The Avocado Dip
• 1 Ripe Avocado
• Handful of Fresh Parsley or Cilantro
• 2 Garlic Cloves
• 2 tbsp Olive Oil
• Juice of ½ Lemon
• Pinch of Salt & Pepper
• Splash of Water (to adjust consistency)

Step-by-Step Instructions
1. Sauté the Base: In a large pan, sauté the onion in a little oil until translucent. Add the ground beef and cook until browned, breaking it up with your spatula.
2. Flavor Boost: Stir in your spices and tomato paste. Pour in the beef broth and simmer until the liquid has reduced, leaving you with a thick, savory beef mixture.
