Classic Carrot Cake with Cream Cheese Frosting

  • Ingredients: 2 cups flour, 2 cups sugar, 1 tsp baking soda, 2 tsp cinnamon, 3 cups grated carrots, 1 cup chopped walnuts, 1 cup oil, 4 eggs. Frosting: 8oz cream cheese, 1/2 cup butter, 3 cups powdered sugar, 1 tsp vanilla.
  • Instructions:
    1. Preheat oven to 350°F (175°C). Grease two 9-inch cake pans.
    2. Whisk eggs, oil, and sugar. Stir in dry ingredients, then fold in carrots and walnuts.
    3. Pour into pans and bake for 30-35 mins.
    4. Cool completely. Beat frosting ingredients until fluffy.
    5. Frost between layers and all over the outside. Garnish with more walnuts.
