
Recipe
- Ingredients: 2 cups flour, 2 cups sugar, 1 tsp baking soda, 2 tsp cinnamon, 3 cups grated carrots, 1 cup chopped walnuts, 1 cup oil, 4 eggs. Frosting: 8oz cream cheese, 1/2 cup butter, 3 cups powdered sugar, 1 tsp vanilla.
- Instructions:
- Preheat oven to 350°F (175°C). Grease two 9-inch cake pans.
- Whisk eggs, oil, and sugar. Stir in dry ingredients, then fold in carrots and walnuts.
- Pour into pans and bake for 30-35 mins.
- Cool completely. Beat frosting ingredients until fluffy.
- Frost between layers and all over the outside. Garnish with more walnuts.
